Dried shiitake, oyster, smoked shiitake, and the log-grown blend (with shiitake, oyster, butterscotch (nameko) mushrooms). Dried mushrooms have the same qualities of fresh, but you can use them when you want them. Cover the mushrooms with water until soft – at least thirty minutes before using them – and don’t discard the cooking liquid! A one ounce bag of dried mushrooms should plump up to about eight ounces of rich and flavorful mushrooms. We should have dried mushrooms for sale at the farmers markets year round.
