Fresh mushrooms are generally available from July through October, but see the mushroom calender for details on availability.

Fresh Nameko Mushrooms have a nutty cashew-like flavor and a firm texture that make them a delicious addition to risotto or quiche, soup or pasta, or as a topping on pizza or bruschetta. Like all CTHM products, our nameko mushrooms are log -grown, in this case locally-harvested black cherry. Fresh mushrooms are generally available in the spring and fall, but see the mushroom calender and Facebook updates for details on availability.

Dried shiitake, oyster, nameko mushrooms and now the mushroom blend have the same qualities of fresh mushrooms, but you can use them when you want them. Cover the mushrooms with water for at least thirty minutes before using them – and don’t discard the cooking liquid! A one ounce bag of dried mushrooms should plump up to about eight ounces of rich and flavorful mushrooms. Mushroom log kits are logs that we have inoculated with shiitake or oyster mycelium and taken care of until they are ready to fruit mushrooms. We only sell these logs when they have demonstrated their ability to produce! Spring is the best time to purchase a log kit, since you will have the entire season ahead of you to watch the kits fruit mushrooms, and to enjoy them!
